In 2005, Round Pond released their inaugural Estate wines to critical praise. That tradition continues today, with each new vintage of their flagship Cabernet Sauvignon. These terroir-inspired wines are intended to embody the essence of a winemaking philosophy rooted in the soil.
This wine is a blend of 77% Cabernet Sauvignon, 18% Petit Verdot, 3% Malbec and 2% Merlot. Individual lots from specific vineyard blocks were fermented and aged separately to allow the broadest range of flavors. All lots received extended maceration with pumpovers and aged 19 months in 70% new, tight grain French oak.
This estate grown Cabernet Sauvignon evolves in the glass with alluring aromas of black cherry, plum, and chocolate. On the palate notes of dark fruit are accompanied by warm toasty oak, vanilla, and walnut. This wine is well-structured, with balanced tannins and a refreshing, food friendly acidity and the finish is long and lingering with notes of chocolate and cherry. This wine may be enjoyed now but will age gracefully over time. Only 204 bottles produced.
