Hall Cabernet Sauvignon, Napa Valley, CA, 2012

Known for her eponymous Cabernets, Kathryn Hall is the proprietress of Hall Winery and has been involved in the California wine industry since her family first purchased a vineyard there over thirty years ago. Today, Hall's estate vineyards encompass more than 500 acres of classic Bordeaux varietals; Cabernet Sauvignon, Merlot, and Sauvignon Blanc.

The Hall Cabernet Sauvignon Napa Valley is a blend of Cabernet Sauvignon, Petit Verdot and Cabernet Franc. The grapes are sourced from estate vineyards as well as Napa Valley vineyard partners with the intent to deliver wine that represents the wine’s origin. To this end, only native yeasts are used and the wine is bottled without fining or filtration. This wine spent 20 months in 65% new French oak resulting in a wine with a gorgeous inky, violet hue with a bouquet of dark black fruit and violets followed by flavors of blackberry, cassis and coffee bean. The palate is rich and dense with chewy tannins with a long, lingering finish. Pair this wine with grilled ribeye steak, roasted lamb or prime rib.
